Fresh Salsa-Even in the Winter


My mom has a neighbor that makes AMAZING salsa.  Every year for Christmas she bring a jar of it over.  We devour it.  My mom asked for the recipe and to our surprise it is made with canned tomatoes.  I love it when I find recipes that use ingredients I am already storing.

This recipe makes salsa similar to that sold in the deli section of the grocery store. 

Violeta’s Easy Fresh Salsa
2 cans Mexican style stewed tomatoes
1 small red onion, chopped
1 small bunch of cilantro chopped
2 jalapeno peppers chopped (more if you like it hotter)
Salt, black pepper and garlic powder to taste.

Process tomatoes in blender or food processor to desired chunkiness.

Add chopped vegetables, salt, pepper and garlic. Mix well.

Let it rest in fridge for 8 hrs or overnight to blend flavors.
Must be eaten within a week. Mix and store in glass or plastic containers.
