Meals in a Jar Monday: Potato Sausage Soup


This is my family's favorite meal in a jar so far.  My kids and husband loved it.  This recipe was created by fellow consultant Amber Spackman (you can shop from Amber here).   We have made this recipe a couple of times, both on the stove top and the crock pot, both ways work great.

Meal in a Jar Potato Sausage Soup

In the Jar


4-5 TBSP. Chicken Bullion
1 TBPS parsley
1/4 tsp. salt
1/8 tsp pepper
1 C. F.D Sausage
1 C. Dehydrated potato chunks
1/3 C. F. D. celery
1/4 C. F.D. onions
1/3 C. Dehydrated carrot dices
1/3 C. F.D. peas
 
Added when making:
1/2 cube butter
3 Quartz water
 1/2 cup flour
1 cup Thrive Instant Milk (pre mixed)

Boil contents of the jar in 3 quarts water for 10 to 15 minutes, until the carrots and potatoes are soft.   

Meanwhile create a roux by melting the butter over low heat, gently whisk in the flour.  Add 1 cup Thrive Instant Milk (reconstituted before adding).  Stir over low heat until thick and bubbly.  Add to the soup and mix well.  Heat 1-2 minutes more and serve.

Tropical Fruit Bark—an easy to make holiday treat made from your food storage.





Over the holiday weekend, a friend shared this recipe for Tropical Fruit Bark with me and we loved it.  It was easy to make, super yummy and made 100% from my food storage. The freeze dried fruit is not rehydrated, so it's crunchy and sweet and just a little addicting.  

I’m thinking it will make an awesome homemade Christmas gift. 

Tropical Fruit Bark 
·         2 cups  chocolate chips, OR chocolate melting wafers  (I used Guittard Milk Chocolate Chips)
·         ¼ cup freeze dried bananas, break large pieces
·         ¼ cup freeze dried pineapple chunks, break large pieces  
·         ¼ cup freeze dried mangoes. 
·         ¼ cup freeze dried blackberries
Directions:

  1.   Line large baking sheet with parchment paper or foil.
  2. Melt chocolate in the microwave for 30 seconds at ½ power repeat as necessary.  Stir after 30 second and repeat until chocolate is melted. 
  3. Spread chocolate ¼ inch think.
  4. Sprinkle dried fruit over the chocolate. 
  5. Press toppings lightly into the chocolate. 
  6.  Chill for 30 minutes.
  7.  Break into pieces and store in an air tight container.

*Note Do NOT rehydrate the freeze dried fruit.  It is supposed to be crunchy.
The Tropical Fruit Bark is made with Thrive freeze dried fruit which is part of the magic, making it crunchy.

Meals in a Jar Monday: Multi Grain Chicken Soup



Multi Grain Chicken Soup

In the jar
3/4 cup rice
1/2 cup medium barley
1/2 cup lentils
1/2 cup split peas
2 tbs dried parsley
1 tbs dried thyme
1 tsp ground ginger
1 tsp dried marjoram
1/2 tsp. ground black pepper
2 tbs freeze dried celery
2 tbs dry carrots
1 tsp garlic powder
1 cup freeze dried chicken slices


Instructions attached
1.     Pour contents of jar into pot and add the following:
1.     12 cups of water
2.     Salt and pepper to taste
2.     Bring to a boil.
3.     Cover the pot and turn down the heat to simmer.
4.     Cook for 1 hour until all grains are tender.
5.     Check seasonings.
6.     Thin with water or chicken stock as required.
